Frosting
Preheat the oven to 350F and grease an 8x8 baking dish
For the dough, add self rising flour and greek yogurt to a bowl, and mix with a wooden spoon until fully combined. Form into a ball of dough
Flour a flat surface and a rolling pin, and roll the dough into a large rectangle (about 1/2 inch thick)
Brush your melted butter over the dough and sprinkle the cinnamon sugar mixture evenly over top
Starting from one end of the dough, slowly roll the dough tightly up the long side until you reach the other end. Using a sharp knife, cut into 8 even pieces.
Place each roll, seam side up, into your greased baking dish. Brush the tops of each roll with left over melted butter. Bake for about 30 minutes until lightly golden brown.
While the rolls are baking, prepare the frosting! Drain your soaked cashews and all all frosting ingredients to a blender or food processor. Blend on high speed for about 2 minutes until creamy and smooth, scraping down the sides with a spoon occasionally. Chill the frosting in the fridge for 1 hour to thicken.
Allow the cinnamon rolls to cool for 10 minutes before frosting and serving!
