These Copycat Snickerdoodle Rx Bars are the perfect homemade protein bars that are both healthy and delicious! Made with just a few simple ingredients and come together in minutes!

Add almonds and cashews to a high speed food processor and pulse into small pieces. Add all other ingredients and blend until smooth. Add water by the tbsp as needed until a doughy texture is formed.
Transfer batter to a lined loaf pan and press firmly into an even layer.
Place in fridge 1 hour to set and slice into bars!
