Healthy Oatmeal Chocolate Chip Cookies

The classic chewy oatmeal chocolate chip cookie recipe you've been looking for! They're gluten free, dairy free, vegan, and are ready to devour in just 20 minutes!
Preheat the oven to 350F and line two baking sheets with parchment paper
In a mixer, beat together the coconut oil, mashed banana, sugar, and vanilla on low speed until smooth.
Add in the egg and mix on medium speed until fluffy and smooth (about 1 minute).
In a medium bowl, mix together the oats, oat flour, baking soda, baking powder and salt
Slowly beat in your oats mixture on low speed until combined. Add in coconut and beat on low speed till just combined
Remove bowl from the mixer and fold in the chocolate chips
Use a medium cookie scoop to place about 1 heaping tablespoon of dough on baking sheet. Repeat with remaining batter, leaving about 2 inches between each cookie
Bake for 10-12 minutes until edges are lightly golden brown
Let cool 10mins before transferring to a wire rack or serving
