Pumpkin Chocolate Chip Cookies

    These pumpkin chocolate chip cookies are soft baked, warmly spiced, and are loaded with ooey gooey chocolate chips! Vegan, gluten-free, grain free and healthy enough to eat for breakfast!

    1. Preheat oven to 350F and line a baking sheet with parchment paper.

    2. In a large bowl, mix together wet ingredients.

    3. Add in the flour, pumpkin spice, and baking soda.

    4. Fold in chocolate chips.

    5. Refrigerate for 30 minutes.

    6. Use a cookie scoop to place dough onto your prepared baking sheet and press down just slightly into a cookie shape.

    7. Bake for 10-12 minutes. Let cool on pan for 10 minutes before devouring!
